About the Recipe
I had the most wonderful trip to visit my brother in Norway over the summer. One of the highlights of the country is the clean, fresh meals they prepare. One night, just before bed, my brother Kenneth invited me to help him make some bread. I thought, “It’s 11 PM—why start such a big project now?” But to my surprise, it turned out to be a quick ten-minute process. We mixed the ingredients, set them aside, and forgot about them for the night. Kenneth skillfully combined everything and placed the pan in a cold oven.
The next morning, as he and my sister-in-law buzzed around the kitchen preparing breakfast, the house filled with the delightful aroma of freshly baked bread. The perfect accompaniment was the famous Norwegian brown cheese, a beloved snack enjoyed daily in Norway.
It was so easy that we now bake a loaf every Sunday night. I even started experimenting by adding chopped rosemary and different seeds to switch things up with the seasons. We use this bread for everything—toast, sandwiches, dipping, and so many other delicious meals!
Ingredients
1tsp dry yeast
1tsp sugar
1tsp salt
1C oats
1C rye flour
2C all purpose wheat flour
1C whole wheat flour
Handfull sunflour seeds
Handfull pumpkin seeds
1tbsp sunflour oil
water
Preparation
Step 1
Line bread pan with parchment paper
Step 2
Mix all dry ingredients in a large bowl: dry yeast, sugar, salt, oats, rye flour, all purpose wheat flour, 1C whole wheat flour, Handfull sunflour seeds, Handfull pumpkin seeds
Step 3
Fold in sunflour oil, and gradually fold in water until dough becomes sticky and begins to ball up.
Step 4
Place the dough in your bread pan. Drizzle the top with sunflour oil and sprinkle the top oats, sunflour seeds and pumpkin seeds.
Step 5
Place bread pan in a cold oven or microwave and forget about it for 8 hours.
Step 6
Preheat oven to 410F. Bake bread for 50 minutes to 1 hour.
